Half the fun of road trips are the dhabas you encounter on the way. And whereas, we all love ourselves the usual - a good crispy stuffed paratha and a katori of rich butter chicken and masala-laden vegetables, sometimes, just sometimes, it’s worth trying something new. Like cheese curry.
I came across Cheese Butter Masala at a dhaba-like restaurant called Marudhara (between Jaisalmer and Jodhpur). Expecting it to be paneer in a generic orange curry, I was thrilled to find it was in fact, blocks of actual cheese (I suspect, Amul tinned cheese) tossed in a beautiful spicy gravy. The rectangular blocks had obviously been tossed in at a later stage in the cooking process as they were only the slightest bit melty.
Pair this gooey spicy delight with a butter roti or better still, a buttered bajra roti and you’re golden.
I haven’t seen this gem of a dish in city restaurants though I’ll be on a lookout now. Or maybe I’ll just attempt cooking my own at home. After all, sweet dreams are made of cheese.
